Method
-
STEP 01
Prep
Preheat the oven to 180 °C. Cut the broccoli into florets, cut the pancetta into 1x2 cm cubes and mince the garlic. Shred half of the brie and cut the other half into long, straight slices.
-
STEP 02
Cook the pasta
Bring a large pot of salted water to the boil and cook the penne per the packet, pulling it 1 minute early since it finishes in the oven. Drain.
-
STEP 03
Steam the broccoli
At the same time, steam the broccoli with a little salt and pepper for 5 to 7 minutes.
-
STEP 04
Evaporate
Put a shallow layer of water in a large pan and spread the pancetta in it. Heat on high until the water has evaporated.
-
STEP 05
Fry the pancetta
Lower to medium heat, add a little butter if needed, and fry until golden and crisp, until the first brown bits stick to the pan.
-
STEP 06
Combine
Spoon the pancetta into a large baking dish with the penne and broccoli. Leave the fat in the pan.
-
STEP 07
Garlic and deglaze
Add the garlic to the pancetta fat and let it cook gently for 1 minute. Deglaze with a splash of white wine or sherry, scraping up the brown bits.
-
STEP 08
Make the sauce
Turn to low heat and carefully stir in the sour cream and cooking cream. Add the shredded brie gradually so it melts slowly. Do not let the sauce boil. Season with pepper.
-
STEP 09
Toast the pine nuts
Optional: toast the pine nuts in a dry pan on high heat, watching closely because they burn fast, and add them to the dish.
-
STEP 10
Assemble
Pour the sauce over the penne mixture and stir lightly. Lay the sliced brie on top.
-
STEP 11
Bake
Bake in the preheated oven for 15 minutes.
